Blueberry Banana Bread Recipe

I am one of those people that can’t stand to see food go to waste.  Which is why when I see those really ripe bananas on my counter, I can only think one thing, Banana Bread!  It is quick, easy and the boys love fresh banana bread for breakfast.  Well, this time I mixed it up a little and added some blueberries, which got rave reviews from my clan.  So, here it is for you all to try, my recipe for Blueberry Banana Bread!

Blueberry Banana Bread Recipe

  • 2 Ripe Bananas (Mashed)
  • 4oz Unsweetened Applesauce (I use Musselmans)
  • 1/3 cup Melted Butter
  • 1 cup Sugar
  • 1 egg (beaten)
  • 1 teaspoon Vanilla
  • 1 teaspoon Baking Soda
  • 1 pinch Salt
  • 1 2/3 cup Flour
  • 1 1/2 cup Fresh Blueberries (Cleaned and Dried)


Step 1
Preheat oven to 350F and butter a loaf/bread pan (4X8 inches)
Step 2
With a wooden spoon mix melted butter, mashed bananas, and applesauce.
Step 3
Add the sugar, egg, and vanilla and mix till combined.
Step 4
Sprinkle the baking soda and salt and mix.
Step 5
Add the flour and mix.
Step 6
Gently fold in the blueberries.
Step 7
Pour into bread pan and bake for 1 hour.
Step 8
Cool on a rack and then you are ready to remove from pan and serve!
